Tristans makes a persuasive case for informality at the high end. The setting is comfortable and relaxed rather than ceremonious, with the room offering enough polish for a special occasion while still allowing the table to settle into its own rhythm. That balance matters. Michelin-starred cooking can sometimes make diners feel as if they are entering an examination; Tristan is more interested in giving them a good evening, with the food doing the serious work beneath the easy manner.

The modern European cooking is composed without being mannered. Ingredients are treated with care, sauces have clarity and the plates show a kitchen that understands when a flourish earns its place. There is a pleasing sense of balance across the menu, moving between delicacy and savour, richness and freshness, without losing sight of the appetite that brought everyone in. The best courses are memorable for their proportion: nothing feels accidental, but nothing seems designed merely to prove a point either.

Service keeps the atmosphere buoyant. The team is informed, attentive and comfortable enough to let conversation happen, while the kitchen delivers with the consistency expected of a starred restaurant. Horsham gives the meal a different sense of occasion from central London, and that is part of the appeal: the restaurant feels like a destination without requiring grandeur. Tristans is a thoroughly assured experience, with the kind of relaxed confidence that makes excellent cooking feel generous rather than remote. It is simply amazing in the most convincing sense: quietly, completely and without fuss.
