The Pass tasting menu at South Lodge
The Pass @ South LodgeBTNDC / Tasting Menu

The Pass is tucked into South Lodge's Sussex countryside, but its natural habitat is the kitchen. With around 20 covers, the room feels like an extension of the pass itself, and the chef's table places you right in the heart of the action. Chefs in black-blue aprons move with the calm focus of a small orchestra; Matt Gillan conducts, and every course arrives with a description delivered by the person who has just helped make it. The technology and modernity of the room never overwhelm the welcome.

The ten-dish taster is a sequence of confident ideas. A pork-belly ball with pork-scratching panko starts the evening with a wink, then tomato, celery and seeds finds something divine in a celery sorbet. Warm mini loaves come with three salts — Hawaiian volcanic, Brittany grey and pink Hawaiian clay — before cod with artichoke, salmon roe, fried squid and squid-ink mayonnaise. Beef tartare with a crisp fried hen's egg and nitrogen-frozen lime pellets is all contrast, while cauliflower with almond and Gruyère is the posh cauliflower cheese the table keeps talking about.

King scallops with lentil and miso, partridge with Jerusalem artichoke and raspberry, a Fourme d'Ambert cheese ball, then gingerbread, yuzu and white-chocolate crème brûlée give the menu a satisfying range. A peach and almond marzipan dessert closes the performance without fuss. The famous juice flight is every bit as considered as the wine, and the chefs' passionate explanations make the craft feel shared rather than hidden. This is tasting-menu dining as collaboration: precise, modern and unusually generous.
