Rocksalt has one of the great restaurant settings in the South East. Cantilevered over Folkestone harbour, the dining room looks directly towards the water, with the English Channel changing colour beyond the floor-to-ceiling windows. The view is an obvious draw, but the room avoids becoming a viewing platform with tables. There is a calm, contemporary confidence to the design, and the bar and terrace give the restaurant enough flexibility for a drink, a long lunch or a proper evening meal. At dusk, the atmosphere does much of the work.

The menu is built around seasonality, locality and simplicity, which is the right approach when the produce is this close to the point of arrival. Day-boat fish and seafood are allowed to taste of themselves, with sauces and garnishes used for lift rather than camouflage. There is a pleasing amount of choice for a mixed table, though the best dishes are the direct ones: a clean piece of fish, a bright shellfish plate or something with enough char to echo the harbour’s industrial edge. Local farms and Kentish ingredients broaden the menu without taking it away from the coast.

Service is friendly and generally well organised, with the team comfortable explaining what is good on the day. A busy terrace or full dining room can make the pacing less even, and the restaurant’s most famous asset inevitably influences the price, but the experience remains convincing. Rocksalt is not a hushed seafood temple; it is a lively coastal address that understands its audience. Come for the view, stay for the freshness and leave with the sense that Folkestone has become a very good place to eat by the water.
