Restaurant Interlude begins with the grounds. Leonardslee’s gardens bring a sense of distance and quiet before the meal has properly started, and the restaurant’s room keeps that relationship alive through its windows, natural materials and measured pace. It is intimate rather than grand, with the atmosphere shaped by the landscape outside rather than by decoration inside. The experience feels deliberately removed from the noise of ordinary service, though never so hushed that a table cannot relax into it.

Executive chef Jean Delport and the team build the menu around the seasons, foraging directly from the 240-acre estate where possible and sourcing from Sussex producers when they cannot. That connection is more than a line in the introduction. Herbs, leaves, flowers and woodland flavours appear with purpose, giving the dishes a sense of place without turning every course into a botanical exercise. The cooking is precise and often delicate, but there is enough savoury depth and warmth to keep the experience grounded. A well-judged acidity or a little smoke is often what makes the memory last.

Service is calm, fluent and sensitive to the kind of evening Interlude is offering. Courses arrive with useful context, not a stream of performance, and the team gives the table time to notice the meal. The price is significant and the journey is part of the commitment, but the restaurant’s setting and originality make it feel like a genuine destination. Interlude is not simply a Michelin-starred restaurant in a garden. It is a carefully joined-up experience in which the estate, the kitchen and the pace of service all tell the same story.
