Mugaritz begins with many of the ingredients one hopes for in a destination meal. The approach through the Basque countryside is idyllic, the setting feels secluded and the welcome is genuinely warm. There is a sense of curiosity at the table, helped by the staff’s care and by the promise of a menu built around ideas rather than familiar luxury. An early course outside, accompanied by a small book intended to record reactions, makes the concept clear: this is meant to be an active, questioning experience rather than a conventional tasting menu.

The difficulty is that the ideas rarely resolve into enjoyable food. Across the meal, textures repeatedly became the main event — soft, gelatinous or simply underdeveloped — while flavour was muted, indistinct or at odds with the dish’s purpose. Experimentation is not the problem; a two-Michelin-star restaurant can reasonably ask a guest to reconsider an ingredient or a format. The problem is the lack of pleasure beneath the provocation. Only a small number of courses offered the balance, seasoning or clarity needed to make the intellectual exercise feel generous. The wine pairing had several strong selections, but some port-led matches felt heavy and disconnected.

The team remained attentive throughout, and that matters. The service was not the source of the disappointment; it was the distance between the restaurant’s ambition and what arrived on the plate. Creative cooking does not need to be comforting, but it does need to be coherent, and it should leave the diner feeling invited rather than tested. Mugaritz is clearly sincere in its pursuit of a different kind of restaurant experience. On this visit, however, the execution made the meal feel more like an endurance exercise than a revelation. The score reflects that gap, measured against the promise of two stars rather than the beauty of the setting alone.
